Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 heaping teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 4 tablespoons 1/2 stick unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1 large egg
  • 3/4 teaspoon vanilla extract
  • 3/4 cup semisweet chocolate chips
  • 12 Costco Croissants

Method

Warm Up Your Oven:
  1. Preheat your oven to a cozy 350°F (175°C), perfect for baking up dreams.
Let's Make the Dough
  1. Place 2 1/2 cups all-purpose flour, 1 heaping teaspoon baking soda, and 1/2 teaspoon sea salt together in a medium bowl; set aside.
  2. Place 8 tablespoons room temperature butter and 2 cups packed light brown sugar in a stand mixer fitted with the paddle attachment. (Alternatively, use an electric hand mixer and large bowl.) Beat on medium-high speed until light and fluffy, 2 to 3 minutes. Add 2 large eggs and beat until blended. Add 1 1/2 teaspoons vanilla extract and beat until blended.
  3. Turn the mixer off and add the flour mixture. Mix on medium speed just until the flour is mixed in, then turn the mixer to high speed for a few seconds to pull the dough together; it will be chunky. Add 1 1/2 cups semisweet chocolate chips and beat on high speed to thoroughly and quickly mix in the chips, about 5 seconds.
Croissant Prep Time:
  1. Gently slice each croissant horizontally to make a little bed for the cookie dough. Treat them tenderly—they’re getting ready for a transformation!
Dough’s Grand Entrance:
  1. Nestle a generous scoop of chilled cookie dough between the croissant halves. It’s like tucking a sweet secret inside!
Baking Magic:
  1. Lay the filled croissants on a baking sheet lined with a parchment paper carpet. Bake for about 12-13 minutes until the croissants puff up golden and the cookie dough peeks out with a gooey hello!
The Enchanting Finish:
  1. Let the croissants cool just a bit, then shower them with powdered sugar snow or a chocolate drizzle river. It’s like adding fairy dust!
Time to Relish:
  1. Serve these charming treats warm, maybe with a cup of tea or a dollop of ice cream. They're sure to cast a spell of joy on anyone who takes a bite!
