Ingredients:
• 1 lb beef stew meat
• 2 tablespoons vegetable oil
• 7 oz package of fideo noodles
• 2 medium potatoes, diced
• 1/2 onion, chopped
• 2 cloves garlic, minced
• 2 Roma tomatoes, diced
• 1 can (8 oz) tomato sauce
• 4 cups beef broth (or water)
• 1 teaspoon ground cumin
• 1/2 teaspoon oregano
• Salt and pepper, to taste
• Fresh cilantro, for garnish
• Lime wedges, for serving
Instructions:
1. Brown the Beef: Heat 1 tablespoon of vegetable oil in a large pot over medium heat. Add the beef stew meat or ground beef, season with salt and pepper, and cook until browned on all sides. Remove the meat from the pot and set aside.
2. Toast the Fideo: In the same pot, add another tablespoon of vegetable oil. Toss in the fideo noodles and stir constantly until they turn golden brown, about 3-4 minutes. Remove the fideo from the pot and set aside.
3. Sauté the Aromatics: Add the chopped onion to the pot and cook until softened, about 2-3 minutes. Add the minced garlic and cook for another minute until fragrant.
4. Cook the Tomatoes and Spices: Stir in the diced tomatoes, tomato sauce, cumin, and oregano. Let the mixture cook for 2-3 minutes, allowing the flavors to develop.
5. Simmer the Soup: Pour in the beef broth and bring to a gentle boil. Add the diced potatoes and browned beef. Season with salt and pepper, and reduce the heat to a simmer. Let it cook for about 10-15 minutes, or until the potatoes are tender.
6. Cook the Noodles: Add the toasted fideo noodles to the pot and cook for another 7-10 minutes, stirring occasionally until the noodles are tender and the soup thickens slightly.
7. Serve: Ladle the fideo soup into bowls and garnish with fresh cilantro if desired. Serve with lime wedges on the side to brighten up the flavors.
